Zucchini (courgettes) are available in
dark green, pale green, yellow, striped and mottled varieties all year.
Look for firm, small to medium-sized zucchini (courgettes) with smooth
skin. Squash also come in a
wonderful range of colors and can be bought in a 'button' or baby
variety. Cook whole, halved, quartered or sliced in similar ways to
zucchini (courgettes). Chokos, grown in many back gardens, are mainly
available during the winter months and can be used in soups, pickles,
stir-fries and gratins. The
versatile pumpkin comes in a variety of shapes and colors. Some have
edible skins. Others have sturdy skins which make spectacular containers
for soup. They can also be carved to grow and can be stored whole for up
to two months, which makes them an ideal choice for the home gardener.
Bright green okra has a sticky texture and
will keep for only a few days, even if refrigerated. The pods should be
trimmed and used sliced or whole. |
