Cream of Choko Soup Recipes

Ingredients :




1/2 cup

6 cups


1/2 cup


onion, peeled and chopped

stick celery, chopped


vegetable stock

clove garlic, crushed

sour cream (optional)

capsicum (pepper), cut in strips

freshly ground black pepper, to taste

Method :
  1. Peel the chokos, remove the hard core and chop roughly.
  2. Place chokos, onion, celery, rice, stock, garlic and pepper in a large saucepan.
  3. Simmer for 45 minutes.
  4. Cool and puree the soup in a blender, or through a sieve.
  5. Return mixture to saucepan.
  6. Stir in the sour cream over low heat.
  7. Do not allow it to boil.
  8. Serve hot with a dollop of sour cream if desired.
  9. Garnish with capsicum strips.

Serves 4-6
