Cindy's Pumpkin Casserole Recipes

Ingredients :

150g brown rice

500g sweet pumpkin

3 tbsp cooking oil

4 medium onions

1/2 tsp ground cloves

1/2 tsp allspice

1/2 tsp cinnamon

1/2 tsp ground nutmeg

1 tsp salt

2 tbsp brewers yeast

1 cup vegetable stock

bran flakes

Method :
  1. This recipe came to us by way of a friend and we vary the spices each time we make it.
  2. Pre-cook both rice and pumpkin making sure the latter is somewhat on the underdone side.
  3. Place the oil to heat, and slice in the onions, cooking until partially tender.
  4. Put rice, pumpkin and onions in a bowl and mash and mix them together.
  5. Add spices, salt, brewers yeast and stock.
  6. Pile into a casserole dish, top with a layer of bran flakes and bake slowly for 30 minutes.
  7. Serve with green beans or spinach.

Oven 350F for the 30 minutes baking

Serves 4 - 6
