Ratatouille Tartlets Recipes

Ingredients :


2 tbsp







onion, peeled and sliced in rings

olive oil

cloves garlic, crushed

zucchini (courgettes), cut into slices

capsicum (pepper), seeded

can tomatoes

small eggplant (aubergine), diced

pastry shells

freshly ground black pepper, to taste

bouquet garni of 3 marjoram sprigs, 2 thyme sprigs, 1 parsley sprig, 1/2 bay leaf

Method :
  1. Sauté onion in oil until tender.
  2. Add garlic.
  3. Cook for 1 minute.
  4. Stir in zucchini, capsicum, tomatoes, eggplant, bouquet garni and seasoning.
  5. Cover.
  6. Simmer for 15 minutes.
  7. When cool, fill the pastry shells, serve.
