Baby Yellow and Green Squash Recipes

Ingredients :

1kg

60g

1 tbsp

mixed green and yellow squash

butter or margarine

orange juice

orange peel cut into fine threads, blanched, for garnish

Method :

  1. Wash and trim squash.

  2. Cook in boiling water for 5-6 minutes, or until crisp but tender.

  3. Drain and refresh under cold water, cold again.

  4. Just before serving, melt butter.

  5. Add squash and orange juice.

  6. Heat through.

  7. Garnish with orange threads.

  8. Serve

If squash are medium-sized, cut squash into vertical slices.

Serves 6-8
