Divine Lentil and Pumpkin Loaf Recipes

Ingredients :

250g brown lentils, cooked

500g pumpkin, cooked

2 medium onions, finely chopped

185g fresh breadcrumbs

ground black pepper

2 tbsp chopped parsley

4 tsp chopped fresh thyme or good pinch of dried

skimmed milk to bind

Method :
  1. Mash the lentils.
  2. Add all remaining ingredients, except the skimmed milk.
  3. Combine well.
  4. Add milk, a little at a time, until the mixture is moist and holds together.
  5. Grease a loaf tin.
  6. Spoon in the lentil mixture and press down firmly.
  7. Bake in a preheated oven for 30 minutes.
  8. Leave the loaf to cool in the tin for 10 minutes before turning out and cutting into thick slices.
  9. Serve hot.

Serve with Classic Tomato Sauce and a green salad.
