Ratatouille Cooking Recipes

Ingredients :

olive oil

medium size onion, finely chopped

cloves garlic, finely chopped

medium size eggplant, quartered lengthwise and cut into 1/8" slices

medium size zucchini, cut into 1/8" inch slices

chopped tomatoes with any juice

tomato paste

chopped fresh basil or 11/2 tsp dried

dried thyme



Method :
  1. Combine the olive oil, onion and garlic in a 31/2 quart microwavable casserole.
  2. Cover and microwave on high 100% for 2-3 minutes, stirring after 11/2 minutes, until the onion is softened.
  3. Stir in the eggplant and replace the cover.
  4. Microwave on high 100% for 2-3 minutes, stirring after 1 minute, until the eggplant softens a little.
  5. Add the zucchini, the tomatoes and their juice, the tomato paste, herbs and seasoning.
  6. Microwave on high 100% for 10-12 minutes, stirring every 4 minutes until the vegetables are tender.

Serves 8

Whether you serve it hot or cold, ratatouille, chock full of tomatoes and eggplant, is a long standing favorite.
