Ratatouille Cooking Recipe
size onion, finely chopped
garlic, finely chopped
size eggplant, quartered lengthwise and cut into 1/8" slices
size zucchini, cut into 1/8" inch slices
tomatoes with any juice
fresh basil or 11/2 tsp dried
- Combine the olive oil, onion and
garlic in a 31/2 quart microwavable casserole.
- Cover and microwave on high 100%
for 2-3 minutes, stirring after 11/2 minutes, until the
onion is softened.
- Stir in the eggplant and replace
- Microwave on high 100% for 2-3
minutes, stirring after 1 minute, until the eggplant softens a
- Add the zucchini, the tomatoes and
their juice, the tomato paste, herbs and seasoning.
- Microwave on high 100% for 10-12
minutes, stirring every 4 minutes until the vegetables are tender.
