Chilled Pumpkin Soup Cooking Recipes

Ingredients : |

pumpkin, peeled and diced
chicken stock
onion, chopped
spring onions, sliced
cream
freshly ground black pepper, to taste
chives, to garnish |
Method :
- Cook pumpkin in water until
tender.
- Drain, cool and puree in a blender
or food processor.
- Cook the stock with onion and
spring onions for 15 minutes.
- Cool and strain.
- Blend the pumpkin into the stock.
- Season to taste.
- Cover and chill.
- Serve with a swirl to cream and
chives to garnish.
Fresh stock, commercial or stock cubes
may be used.
Serves 6
