Chilled Pumpkin Soup Cooking Recipes

Ingredients :

1/4 cup

pumpkin, peeled and diced

chicken stock

onion, chopped

spring onions, sliced

cream

freshly ground black pepper, to taste

chives, to garnish

Method :
  1. Cook pumpkin in water until tender.
  2. Drain, cool and puree in a blender or food processor.
  3. Cook the stock with onion and spring onions for 15 minutes.
  4. Cool and strain.
  5. Blend the pumpkin into the stock.
  6. Season to taste.
  7. Cover and chill.
  8. Serve with a swirl to cream and chives to garnish.

Fresh stock, commercial or stock cubes may be used.
