Wheat Stuffed Zucchini Recipes

Ingredients :

4 evenly sized zucchini 15-18cm long

2 cups pre-cooked savoury mince

1 cup pre-soaked wheat groats

2 tomatoes

1 green capsicum

60g green peas

2 egg yolks

1 cup heavy cream

seasoning

Method :
  1. Halve the zucchini length wide and scoop out seeds and a little flesh to leave a good hollow.
  2. Savoury mince should contain onion and salt.
  3. If what you have on hand does not, slice a little onion finely and place in a bowl with mince.
  4. Squeeze water from the groats and add along with quartered tomatoes, sliced capsicum and peas.
  5. Mix all together.
  6. Combine egg yolks with cream and add to meal.
  7. Season to taste and fill zucchini.
  8. Bake for 1 hour or until zucchini flesh if soft.
  9. Serve as a complete luncheon dish.

Oven 350F

Serves 4 - 6
