Yoghurt and Cucumber Soup Cooking Recipes

Ingredients :

cucumber, peeled, seeded and diced

chicken or vegetable stock

cloves garlic, crushed

carton natural yoghurt

finely chopped coriander

iced water

thin slices lemon

chopped walnuts

juice 1/2 lemon

Method :
  1. Cook cucumber in stock until just tender.
  2. Refrigerate till cold.
  3. Mix garlic with yoghurt and lemon juice.
  4. Stir in coriander, chilled cucumber and stock.
  5. Pour in iced water.
  6. Mix well.
  7. Serve topped with lemon slices and chopped walnuts.
