Tangy Mango and Cucumber Soup Cooking Recipes

Ingredients :

spring onions, trimmed

mango, peeled, seeded and pureed

lemon juice

orange and mango juice

natural low-fat yoghurt

clove garlic, crushed

cucumbers, peeled, seeded and grated

red capsicum (pepper), finely diced

freshly ground pepper

Method :
  1. In a food processor or blender, process spring onions, mango, lemon juice, orange and mango juice, yoghurt and garlic.
  2. Transfer to a serving bowl.
  3. Add grated cucumber and seasoning.
  4. Chill until ready to serve.
  5. Garnish with sliced cucumber and finely diced capsicum.
