Bean Salad with Artichoke Recipes

Ingredients :

green beans

red capsicum

butter beans, drained and washed

artichoke hearts, cut in halves

olive oil

vinegar

Method :
  1. Cut tops and tails off beans.
  2. Cook beans in 2cm of boiling water for 2 minutes, drain, run cold water over beans to cool.
  3. Cut capsicum into very fine strips and place in a dish of ice water for 20 minutes, or until curled.
  4. Toss together beans, butter beans, artichokes and capsicum, pour over combined olive oil and vinegar.

Serves 4
