Lentil and Vegetable Soup Recipes

Ingredients :

1 liter water

90g onion, finely chopped

1 medium potato, scrubbed and diced

60g celery, sliced

90g brown lentils

1 small carrot, sliced

2 tbsp parsley, chopped

ground black pepper

2 small courgettes, sliced

Method :
  1. In a large saucepan, combine all the ingredients except the courgettes.
  2. Cover and bring to the boil.
  3. Reduce heat and simmer for 30 minutes, or until vegetables and lentils are tender.
  4. Add sliced courgettes and simmer a further 5 minutes.

Serve hot with chopped parsley sprinkled on top, accompanied by crusty wholemeal bread.
