Ful Medames Recipes

Ingredients :

450 g Egyptian brown beans

2 garlic cloves

2 tbsp chopped fresh parsley

4 hard boiled eggs

salt and pepper

olive oil

lemon quarters

Method :
  1. Soak the beans in cold water overnight.
  2. Drain well and cover with fresh cold water.
  3. Bring slowly to boiling point, then simmer for about 11/4 hours until the beans are tender.
  4. Drain well.
  5. Crush the garlic and stir into the beans.
  6. Sprinkle with parsley.
  7. Top each portion with an egg.
  8. Hand salt, pepper, oil and lemon quarters separately, so that each person seasons his own portion.

Note :

These are small brown beans which are particularly popular in Egypt when made into this unusual dish with hard boiled eggs.

Serves 4 - 6
