Heat oil in a
large skillet and sauté onion and garlic until golden. Add cumin, salt,
pepper curry and ginger. Stir in flour and cook 2-3 minutes. Slowly add
water and mix until creamy and smooth. Add broccoli, cauliflower,
carrots, peas, apples, raisins, and tofu, and cook until mixture is
thick and bubbly and vegetables are tender.
