Indian Vegetable Curry Recipes

Ingredients :

1 tbsp light sesame oil

1 cup diced onion

2 cloves garlic

1 tsp ground cumin

1 tsp sea salt

1 tsp black pepper

1 tbsp dried curry blend

2 tbsp fresh grated ginger

2 tbsp whole-wheat flour

2 cup water

1 cup broccoli florets

1 cup cauliflower florets

1/2 cup chopped carrots

1/2 cup fresh green peas

1/2 cup diced apple

1/2 cup raisins

1 cup cubed firm tofu

Method :

Heat oil in a large skillet and sauté onion and garlic until golden. Add cumin, salt, pepper curry and ginger. Stir in flour and cook 2-3 minutes. Slowly add water and mix until creamy and smooth. Add broccoli, cauliflower, carrots, peas, apples, raisins, and tofu, and cook until mixture is thick and bubbly and vegetables are tender.

Serves 6

A truly traditional Indian recipe, this spicy concoction makes an intriguing party dish with its unexpected addition of raisins and apple. Serve with warmed pita bread and Collard and Carrot Raita.
