Gratin of Potatoes and Courgettes (Gratin De Pommes De Terre Et Courgettes) Recipes
900g (2 lb) waxy potatoes, peeled
450g (1 lb) courgettes
butter, for greasing
1 garlic clove, crushed
salt and freshly milled black pepper
15ml (1 tbsp) chopped fresh thyme
300ml (1/2 pint) double cream
25g (1 oz) butter, cut into small pieces
Cut the potatoes and courgettes into 0.5cm
(1/4 inch) thick slices. Cook the potatoes in a saucepan of boiling salted
water for 3 minutes, adding the courgettes to the pan for the last minute.
Put half the
vegetables in a well buttered gratin dish, add half the garlic and some
seasoning. Beat the thyme and cream together and pour evenly over the
vegetables. Dot the top with the pieces of butter.
Cook at 180C
(350F) mark 4 for 30-40 minutes, or until the vegetables are tender.
