The range of vegetables available in
France is very wide, since almost every kind of vegetable can be grown
there, and the quality is usually excellent. At the greengrocer's or in
the market the French housewife expects to pick out her own fruit and
vegetables individually from the displays.
Vegetable dishes are often served by the
French as a separate course and are not regarded simply as an
accompaniment to a meat dish. For this reason, a great deal of care and
attention goes into their preparation and cooking.
