Baked Aubergines Recipe

Baked Aubergines (aubergines Ó la provenšale) Recipes

Ingredients :

1lb aubergines


4 tbsp olive oil

5oz chopped onions

1 pint stock

3.5 fl oz tomato sauce

2 tbsp white wine


4oz grated cheese (Gruyere or Cheddar)

Method :

Cut the aubergines into 1/2 in slices, sprinkle with salt and leave to drain for an hour. Then rinse and pat dry. Fry the aubergines in a frying-pan with the oil, then fry the onions, adding more oil if necessary. Add the stock, tomato sauce, wine and pepper, but no salt. Simmer, uncovered, on a low heat for 1 hour. Remove to an ovenproof fish, cover with a layer of grated cheese, and bake in a moderate oven 190C, 375F, Gas 5 for 25 minutes.
