Tomato Fettuccine with Cauliflower and Olives Cooking Recipes

Ingredients :

medium-sized cauliflower

tomatoes, peeled and chopped

olive oil

clove garlic, crushed

stuffed olives

red fettuccine noodles

ham, diced

Parmesan cheese (60g) or pecorino cheese

Method :
  1. Break cauliflower into florets.

  2. Cook in boiling water for 8 minutes or until tender.

  3. Drain well.

  4. Simmer tomatoes, olive oil and garlic over medium heat for 10 minutes.

  5. Add olives, set aside.

  6. Cook fettuccine in boiling water for 8 minutes or until tender.

  7. Drain well.

  8. Divide between individual plates.

  9. Combine tomato mixture, cauliflower and ham to complete the sauce.

  10. Reheat gently.

  11. Spoon over the fettuccine.

  12. Sprinkle with Parmesan cheese.

  13. Serve hot.
