Flower vegetables include cabbage and some of its relatives:
cauliflower, broccoli and brussels sprouts. Among the many types of
cabbage are compact heads with red leaves and long heads with crinkled
green leaves Brussels sprouts resemble miniature heads of green cabbage.
Store cabbage and their relatives in the vegetable crisper of the
refrigerator for up to one week.
Cauliflower
and broccoli are descendants of the wild cabbage. Look from firm,
unblemished florets when shopping and separate into even-sized florets
to cook, washing well before steaming, microwaving or stir-frying until
tender. They are also delicious raw or blanched in salads or eaten with
a dip. Look for bright green, compact florets.
