Pickled Cauliflower Recipes

Ingredients :

Pickling Mixture

large cauliflower

 

water

vinegar

sugar

salt

peppercorns

bay leaves

cloves

Method :
  1. Break cauliflower into florets.
  2. Wash and drain.
  3. Blanch by placing in a saucepan of boiling water for 2 minutes.
  4. Drain and cool.

To prepare pickling mixture :

  1. Combine all ingredients in a large saucepan.
  2. Bring to the boil.
  3. Cook, stirring continuously, until sugar dissolves.
  4. Set mixture aside to cool.
  5. Place cauliflower in suitable glass or earthenware container.
  6. Pour pickling mixture over it.
  7. Seal container.
  8. Label and store in a cool place.
  9. It should be ready to eat in 2-3 days.

Serves 6-8
