Cheesy Wagon Wheels Recipes

Ingredients :

225 g self raising flour

1/2 tsp salt

175 g mixture of margarine and white vegetable cooking fat

7 tbsp cold milk

2 rounded tbsp tomato ketchup

125 g Cheddar cheese, grated

50 g salted peanuts, finely chopped

1 Grade 4 egg for brushing, well beaten

Method :
  1. Sift flour and salt into a bowl.
  2. Cut in fats until they look like baby peas.
  3. Add milk in one go and dray mixture together with fingertips.
  4. Turn out on to a lightly floured surface and knead briefly until smooth.
  5. Wrap and refrigerate 1/2 hour.
  6. Roll out fairly thinly into a rectangle measuring 15 by 10" (37.5 cm by 25 cm).
  7. Spread with tomato ketchup, taking it to edges of pastry.
  8. Sprinkle cheese over the top, followed by the nuts.
  9. Roll up, starting from one of the longer sides.
  10. Cut into 14 slices.
  11. Transfer to 2 well greased baking trays and brush with egg.
  12. Bake 1 shelf above and 1 shelf below oven center set to hot, 425F, Gas 7.
  13. Allow about 12-15 minutes and reverse position of trays half way through baking.
  14. Cool on a wire rack.
  15. Eat when warm for preference.

Note :

When cold, the Wagon Wheels can go into the packed lunch box.
