Corn Pockets Recipes

Ingredients :

1 cup self raising flour

1 cup rye meal flour

1 tsp baking powder

1/2 tsp salt

cayenne pepper

1 egg

0.3 liters milk

1 cup cooking oil

2 cups frozen corn

Method :
  1. Mix all dry ingredients with the edge of a knife, add a dash of cayenne and pour in the beaten egg and milk.
  2. Let the thick batter stand until you have a fry pan heated to 400F with the oil just beginning to smoke.
  3. Drop the batter in spoonfuls into the oil and cook 5 minutes a side watching that they do not burn.
  4. Place in a warming dish while the corn is simmered for 5 minutes, ready buttered.
  5. Slit the corn pockets halfway through, insert spoonfuls of corn and serve gaping on a breakfast plate with a crisp bacon rasher.
