Stir Fried Summer Vegetables Recipes

Ingredients :

2 tbsp vegetable oil

4 spring onions, trimmed and cut into 2 inch lengths

2 garlic cloves, thinly sliced

1/2 inch slice of fresh root ginger, shredded

4 oz green beans, halved

1/2 small cauliflower, broken into small florets

4 oz mangetout

3 celery sticks, diagonally sliced

2 oz courgettes, diagonally sliced

1 red, green, yellow pepper, cored, deseeded and thinly sliced

2 tbsp soy sauce

1 tsp sesame seed oil

Method :
  1. Heat the oil in a wok or large frying pan, add the spring onions, garlic and ginger, and stir-fry for 30 seconds without browning.
  2. Add all the remaining vegetables, then pepper to taste, and toss well.
  3. Stir-fry for 2 minutes.
  4. Stir in the soy sauce and sesame seed oil and serve immediately.
