Saucy Beans and Franks Recipes

Ingredients :

3 cups cooked beans, drained (pinto, white beans, or any other bean you prefer)

2/3 cup ketchup

4 vegan hot dogs, cooked according to package directions and sliced into 1/4" rounds

2 tbsp tamari

2 tbsp light molasses (or pure maple syrup)

2 tsp vinegar (brown rice, balsamic, or red wine vinegar)

1 tsp onion powder

1/2 tsp dry mustard

several drops liquid hickory smoke, optional

Method :

Combine all the ingredients in a 4 1/2 quart saucepan or Dutch oven. Place over medium heat, stirring occasionally, until hot and bubbly.

Children love this dish because it's fun to eat and tastes terrific. Adults love it because it's a quick, nutritious, last minute entrée. Serve it with whole grain rolls or biscuits and coleslaw.
