Igor's Special Recipes

Ingredients :

6 ounces pasta (any kids, your choice)

2 cups bite size broccoli flowerets

1 large ripe tomato (or 2 to 3 ripe roma tomatoes), chopped

1/4 cup chopped reed onion or sliced scallions

1/4 cup coarsely chopped walnuts

1 tbsp fresh lemon juice

1 tbsp vinegar (red wine or balsamic) or more to taste

1 tbsp extra virgin olive oil

1/4 tsp minced garlic

1/4 tsp curry powder, or more to taste

dash of cayenne pepper

dash of ground black pepper

salt (or tamari) to taste

Method :

Cook the pasta until it is al dente. Do not drain. Remove the pot from the heat, and add the broccoli flowerets. Cover with a lid and let the pasta and broccoli sit for 5 to 8 minutes. Drain well in a colander. While the pasta and broccoli are sitting, combine the remaining ingredients except the salt or tamari in a large bowl. Add the drained pasta and broccoli and toss gently but thoroughly. Taste, add more vinegar if you like a sharper flavor. Season with salt or tamari. Toss again and serve.

This is a great last minute company dish as it is easily doubled and takes practically no time to prepare.
