Fresh Asparagus Polonaise Recipes

Ingredients :

2 bunches

4 tbsp


1/4 cup

1/4 tsp

asparagus, trimmed

butter, melted

hard-boiled eggs, shelled, chopped

thickened cream


capsicum strips for garnish

Method :
  1. Bring a large saucepan of water to boil, add asparagus, cook for 1-2 minutes, drain.

  2. Blend or process the melted butter with the chopped egg, cream and nutmeg until smooth.

  3. Transfer sauce to a small saucepan and heat through.

  4. To serve, spoon over cooked asparagus.

  5. Garnish with capsicum strips, if desired.
