Fresh Asparagus Polonaise Recipes

Ingredients : |
2 bunches
4 tbsp

1/4 cup
1/4 tsp |
asparagus, trimmed
butter, melted
hard-boiled eggs, shelled, chopped
thickened cream
nutmeg
capsicum strips for garnish |
Method :

Bring a large saucepan of water to boil, add asparagus, cook for
1-2 minutes, drain.

Blend or process the melted butter with the chopped egg, cream
and nutmeg until smooth.

Transfer sauce to a small saucepan and heat through.

To serve, spoon over cooked asparagus.

Garnish with capsicum strips, if desired.
