Cracked Wheat and Cashews Recipes

Ingredients :

 1 tbsp salad oil

225 g cracked wheat

125 g lightly toasted cashews

575 ml cold water

3 tsp salt

2 heaped tbsp chopped parsley

Method :
  1. Heat salad oil until hot and sizzling in saucepan.
  2. Add cracked wheat and fry over medium heat for 5 minutes or until golden, turning frequently.
  3. Stir in cashews, water and salt.
  4. Bring to boil, lower heat and cover tightly.
  5. Simmer about 1/4 hour or until wheat has absorbed all the liquid.
  6. Stir occasionally.
  7. Fork in parsley and serve while still very hot.

Serves 6 - 8
