Courgettes and Peppers au Gratin Recipes

Ingredients :

small courgettes, sliced

red pepper, seeded and sliced

green pepper, seeded and sliced

olive oil

walnut or hazelnut oil

soured cream


grated lime rind

flaked almonds

salt and black pepper

Method :
  1. Mix the courgettes and peppers together.
  2. Add the oils and seasoning and toss well until the vegetables are thoroughly coated in oil.
  3. Preheat the oven to 180oC/350oF/Gas 4.
  4. Blend the cream and a little milk together to give a pouring consistency.
  5. Add the lime rind and seasoning and pour evenly over the vegetables.
  6. Sprinkle with the almonds and bake for 30 minutes, until the top is golden and the vegetables tender.

Serves 4

To make this dish into a more substantial meal, top with a layer of sliced, cooked potatoes and a cheese sauce, in place of the soured cream and lime.
