Brussels Sprouts and Chestnuts Recipes

Ingredients :

450 g chestnuts

450 g Brussels sprouts

50 g butter or margarine

Method :
  1. Make a deep cut in the flat side of each chestnut and cook 3/4 to 1 hour in boiling salted water.
  2. Drain chestnuts then take off peel and brown skin.
  3. Break each one into 4-5 pieces.
  4. About 1/2 hour before serving, trim sprouts and make a cross cut in the base of each.
  5. Soak for 10 minutes in cold water.
  6. Drain.
  7. Cook for 10-12 minutes only in boiling salted water.
  8. Drain.
  9. Melt butter or margarine in a large pan.
  10. Add chestnuts and sprouts.
  11. Leave over medium heat and toss over and over until piping hot.
  12. Serve straight away.

Serves 4 - 6
