Brandy Butter Recipes

Ingredients :

125 g unsalted butter, at kitchen temperature

50 g light brown soft sugar

50 g caster sugar

6 tsp brandy

25 g ground almonds

mixed spice

Method :
  1. Beat butter with both sugars until light in texture, very creamy and much paler in color.
  2. Stir in brandy and almonds.
  3. Pipe or spoon into a small serving dish and sprinkle with spice.
  4. Refrigerate until firm before serving.

Old fashioned perhaps, but certainly traditional with the addition of ground almonds.

Serves 6 - 8
