Three Bean Soup Recipes

Ingredients :

100 g haricot beans

50 g red kidney beans

50 g flageolet beans

2 medium onions

2 medium carrots

2 celery sticks

2 garlic cloves

25 g butter

salt and pepper

400 g can tomatoes

300 ml stock

150 ml red wine

1 tbsp tomato purée

1 tbsp Worcestershire sauce

1 bay leaf

sprig of thyme

sprig of parsley

25 g grated Parmesan cheese

Method :
  1. Soak each type of bean separately in cold water overnight.
  2. Drain well and rinse in cold water.
  3. Drain and put the beans in a large pan.
  4. Cover with cold water, bring to the boil and boil for 10 minutes.
  5. Cover and simmer for 1 hour until the beans are tender but unbroken.
  6. Drain well.
  7. Chop the onions, carrots and celery finely.
  8. Crush the garlic.
  9. Melt the butter and cook the vegetables until soft and golden.
  10. Add the tomatoes and their juice, stock, wine, tomato purée, Worcestershire sauce, salt and pepper.
  11. Bring to the boil, cover and simmer for 20 minutes.
  12. Remove the herbs.
  13. Add the beans and simmer for 10 minutes.
  14. Serve hot sprinkled with Parmesan cheese.

A colorful soup which is full of flavor and which makes a nourishing complete meal.
