Lentil Soup Recipes

Ingredients :

225 g lentils

1 large onion

1 bay leaf

2 garlic cloves

1/2 tsp ground cumin

1.2 liter water

1 tbsp chopped fresh parsley

15 g butter

1 tbsp oil

Method :
  1. Put the lentils into a pan.
  2. Chop the onion finely and put half the pieces in the pan.
  3. Add the bay leaf, 1 crushed garlic clove, cumin and water.
  4. Cover and simmer for 40 minutes.
  5. Melt the butter and oil and cook the remaining onion and crushed garlic until soft and golden.
  6. Put the fried onion into a liquidizer with half the lentils and blend until smooth, or put through a sieve.
  7. Return to the pan and bring back to the boil.
  8. Garnish with parsley.

A pleasantly textured soup which is very filling. If liked, bacon stock may be used instead of water.

Serves 4 - 6
