Method :
- Put the lentils into a pan.
- Chop the onion finely and put half
the pieces in the pan.
- Add the bay leaf, 1 crushed garlic
clove, cumin and water.
- Cover and simmer for 40 minutes.
- Melt the butter and oil and cook
the remaining onion and crushed garlic until soft and golden.
- Put the fried onion into a
liquidizer with half the lentils and blend until smooth, or put
through a sieve.
- Return to the pan and bring back
to the boil.
- Garnish with parsley.
A pleasantly textured soup which is
very filling. If liked, bacon stock may be used instead of water.
