Chilled Asparagus 'Broth' Recipes
condensed asparagus soup
142 ml or
1 carton soured cream
cucumber, peeled, grated, wrung dry in tea towel
spring onions, trimmed, washed, very finely chopped
25 g green
pepper, very finely chopped
yoghurt if necessary
tbsp walnuts finely chopped
Spoon asparagus soup into bowl
then smoothly whisk in water and soured cream.
Stir in cucumber, onions and green
pepper, thinning down with milk or yoghurt if soup is thick for
Cover and refrigerate at least 3
Stir round before serving ladle
into bowls and sprinkle with equal amounts of walnuts and celery.
Serves 4 - 6
Cool and cucumber fresh, a delightful soup
for hot days and very easy to make.
