Chilled Asparagus 'Broth' Recipes

Ingredients :

1 can condensed asparagus soup

275 ml water

142 ml or 1 carton soured cream

1/4 large cucumber, peeled, grated, wrung dry in tea towel

1 bunch spring onions, trimmed, washed, very finely chopped

25 g green pepper, very finely chopped

milk or yoghurt if necessary

3 rounded tbsp walnuts finely chopped

3 tbsp chopped celery

Method :
  1. Spoon asparagus soup into bowl then smoothly whisk in water and soured cream.

  2. Stir in cucumber, onions and green pepper, thinning down with milk or yoghurt if soup is thick for personal taste.

  3. Cover and refrigerate at least 3 hours.

  4. Stir round before serving ladle into bowls and sprinkle with equal amounts of walnuts and celery.

Serves 4 - 6

Cool and cucumber fresh, a delightful soup for hot days and very easy to make.
