Cauliflower Soup Recipes

Ingredients :


1/4 oz

3/4 oz

15 fl oz

10 fl oz

1 tsp

cauliflower, divided into florets

butter or margarine

plain flour

vegetable stock



salt and pepper

Method :
  1. Cook the cauliflower in boiling salted water for 10 minutes.
  2. Drain the cauliflower and reserve a few florets for garnishing.
  3. Bring the vegetable stock to the boil, add the rest of the cauliflower and continue cooking until it is tender.
  4. Puree in a blender or food processor or rub through a sieve.
  5. Melt the butter in the soup pan, add the flour and cook for 1 minutes.
  6. Gradually stir in the milk, add the puree and sugar.
  7. Bring to the boil and boil for 2 minutes.
  8. Season with salt and pepper and stir in the reserved cauliflower florets.
