Whole Earth Salad Recipes

Ingredients :

100 g Mung (chinese) bean sprouts

100 g aduki bean sprouts

100 g alfalfa sprouts

100 g Cheddar cheese

1 cabbage lettuce

1 green pepper

3 spring onions

2 tbsp chopped fresh parsley

4 tomatoes

1 avocado

3 tbsp lemon juice

6 tbsp oil

Method :

  1. Mix the three types of sprouts in a salad bowl.

  2. Cut the cheese into small cubes and add to the sprouts.

  3. Shred the lettuce and chop the green pepper and onions finely.

  4. Add to the bowl with the parsley.

  5. Skin the tomatoes and deseed them.

  6. Chop the flesh roughly and add to the bowl.

  7. Peel the avocado and dice the flesh.

  8. Put into the lemon juice and leave to stand for 1 minute

  9. Add the oil and pour the dressing over the salad.

  10. Toss well and serve at once.

A whole meal salad which is surprisingly filling. Serve it with crusty French bread or wholemeal bread.

Serves 4 - 6
