Waldorf Salad Recipes

Ingredients :

1 small Webb, Cos or Ice burg lettuce, shredded, washed, dried

2 tbsp French dressing

4 celery stalks, scrubbed, cut into thin diagonal slices

3 unpeeled red skinned apples, washed, dried, quartered, cored, diced

75 g walnuts, coarsely chopped

150 ml mayonnaise

5 tbsp natural yoghurt

1 extra red skinned apple

1 tbsp lemon juice

Method :
  1. Divide lettuce equally between 6 individual salad bowls or dishes.
  2. Moisten with French dressing.
  3. Transfer celery, diced apples and walnuts to mixing bowl.
  4. Toss with mayonnaise beaten with yoghurt.
  5. Spoon equal amounts into bowls over lettuce.
  6. Quarter last apple, remove core, leave unpeeled and cut into thin slices.
  7. Brush with lemon juice to prevent browning then use to garnish salads.

Note :

A classic from America and a good companion to all kinds of poultry.

Serves 4 - 6
