Mushroom and Broad Bean Salad Recipes

Ingredients :

150 g broad beans

225 g button mushrooms

4 spring onions

150 ml natural yoghurt

salt and pepper

Method :
  1. Cook the beans in salted water until just tender.
  2. Drain and leave until cold.
  3. Wipe the mushrooms and leave whole.
  4. Chop the onions finely.
  5. Mix the beans, mushrooms and onion with the yoghurt and season to taste with salt and pepper.

Note :

If broad beans are not available, kidney or haricot beans may be used, but will need soaking and longer cooking.
