Mixed Green Salad Recipes

Ingredients :

8 lettuce leaves (any variety, or a mixture)

12 cherry tomatoes

1 stick celery, sliced into 1 cm (1/2") lengths

1 carrot, cut into sticks

12 cucumber slices

1 small courgette, sliced

8 small broccoli florets

8 small cauliflower florets

4 French beans, topped and tailed, cut in half

12 mangetout, topped and tailed

Dressing :

1 recipe Vinaigrette Dressing or

1 recipe Yoghurt Dressing

Method :
  1. Wash lettuce leaves, shake off excess water and tear into large pieces.
  2. Use to line a salad bowl.
  3. In a separate bowl, combine the tomatoes, celery, carrot and cucumber.
  4. Blanch the remaining vegetables: Two thirds fill a large saucepan with water and bring to a rapid boil.
  5. Meanwhile, prepare a large bowl of iced water.
  6. When the water boils, add all the remaining vegetables and cook for 2 minutes.
  7. Drain the vegetables and immediately plunge them into the bowl of iced water.
  8. Drain again.
  9. Microwave method: Place all the vegetables on a flat, microwave dish and microwave on 'high' for 2 minutes.
  10. Cool immediately, as above.
  11. Add the blanched vegetables to the fresh.
  12. Pour over Vinaigrette or Yoghurt Dressing and toss salad gently.
  13. Spoon the dressed vegetables into the lettuce lined salad bowl.
