Mango or Papaya and Beet Salad Recipes

Ingredients :

2 cups cubed and cooked beets

1 cup cubed mango or papaya

1/2 cup minced red onion

1/2 fresh lime juice

2 tbsp pickled ginger

2 tbsp ginger vinegar (from the pickled ginger)

Method :

In a medium bowl, combine all the ingredients and toss very gently. Serve immediately on a bed of lettuce. The beets can be quickly cooked in a microwave oven. Place them in a microwaveable dish, add 1 inch of water, and cook on High for 10-15 minutes, or until tender.

Serves 4-8

This visually stunning salad must be made just before serving or the beets will discolor the entire dish. Prepare the ingredients 1 hour or so before serving, but don't toss them together until just before the meal.
