Leek and Quail's Egg Salad Recipes

Ingredients :


1/4 cup




2 tbsp

1/4 cup

quail's eggs

olive oil

clove garlic, crushed

leeks, white part only, cut into thin strips

radicchio lettuce

olive oil, extra

French dressing

sprigs of watercress to garnish

Method :
  1. Bring a large saucepan of water to the boil, add quail's eggs, cook for 3 minutes, drain.
  2. Heat oil in a large frying pan over moderate heat.
  3. Add the garlic and leeks, cook for 3 minutes.
  4. Arrange the leeks on a bed of lettuce on each entree plate.
  5. Shell the eggs and place on top of the leeks.
  6. Dress salad with combined extra olive oil and French dressing, garnish with a sprig of watercress if desired.

Serves 4

Cooking Tip :

If quail's eggs are hard to obtain, substitute 3 hen's eggs, hard-boiled and quartered.
