Hawaiian Salad Recipes

Ingredients :

1 can (375 g) crushed pineapple drained, juice kept for drinks

350 g carrots, peeled, grated

75 g seedless raisins

125 g white cabbage, very finely shredded

French dressing

25 g coarsely shredded coconut (thickish strips as apposed to desiccated), lightly toasted

Method :
  1. Tip drained pineapple into a bowl.
  2. Add carrots, 50 g raisins, white cabbage and toss with sufficient French dressing to moisten.
  3. Transfer to a salad bowl then sprinkle with coconut and remaining raisins.

Note :

Very much an 'all thins bright and beautiful' salad, highly recommended for poultry and burgers.

Serves 4 - 6
