Green Bean Croûton Salad Recipes

Ingredients :

40 g butter or margarine

2 tsp salad oil

1 garlic clove, peeled, halved

2 slices de-crusted bread, cut into small cubes

450 g French beans, topped and tailed, cooked, drained, left to get cold

50 g onion, peeled, finely grated

50 g hazelnuts, finely chopped

French dressing

Method :
  1. Heat butter or margarine with oil and garlic for 5 minutes in frying pan.
  2. Keep heat medium.
  3. Remove garlic then add bread cubes to pan.
  4. Fry fairly briskly until golden brown and crisp.
  5. Lift out of pan and drain on kitchen paper.
  6. Put beans into bowl.
  7. Add onion, hazelnuts and the fried bread cubes.
  8. Toss with sufficient dressing to moisten.
  9. Transfer to a salad bowl and serve as suggested.

Note :

A simple salad contribution, well suited to egg, cheese and meat dishes.

Serves 4 - 6
