Grand Hotel Potato Salad Recipes

Ingredients :

900 g potatoes, freshly cooked

75 g onions, peeled and very finely chopped

75 g green pepper, de-seeded and very finely chopped

4 rounded tbsp sweet pickle

4 celery stalks, scrubbed, thinly sliced

12 radishes, peeled, washed, very thinly sliced

6 Grade 3 hardboiled eggs, shelled and coarsely grated into bowl

150 ml thick mayonnaise

1 tsp prepared English mustard

150 g natural yoghurt

salt to taste

4 heaped tbsp chopped parsley

Method :
  1. Dice potatoes and put into large bowl.
  2. Using a large spoon, toss in onion, green pepper, sweet pickle, celery, radishes and eggs.
  3. Beat mayonnaise with mustard and yoghurt.
  4. Add to potato mixture and stir gently with a spoon to mix.
  5. Season to taste.
  6. Gently stir in half the parsley.
  7. Pile mixture in a serving dish and sprinkle rest of parsley over the top.

Note :

Few can resist potato salad and this one is better than most with its assortment of surprise ingredients. Serve with meat, poultry, fish, egg and cheese dishes.
