Crunchy Chinese Salad Recipes

Ingredients :

225 g Mung (Chinese) bean sprouts

1 large carrot

2 celery sticks

50 g cashew nuts or peanuts

1 tbsp sesame seeds

2 tbsp oil

1 tbsp wine vinegar

watercress, lettuce or chicory

Method :
  1. Put the bean sprouts into a serving bowl.
  2. Grate the carrot coarsely.
  3. Chop the celery finely.
  4. Mix the carrot and celery into the bean sprouts and stir in the nuts and sesame seeds.
  5. Mix the oil and vinegar, pour over the salad and toss well.
  6. Serve on a bed of watercress, lettuce or chicory.

A particularly good winter salad which is colorful and refreshing.

Serves 4 - 6
