Courgette Blue Cheese and Almond Salad Recipes

Ingredients :

1 medium round lettuce, washed, drained, wiped dry

1 bunch spring onions, trimmed, washed, coarsely chopped

125 g firm blue cheese (such as Danish), cut into tiny dice or coarsely chopped

225 g unpeeled courgettes, topped adn tailed, washed, dried, very thinly sliced

75 g blanched almonds, skinned, lightly toasted, chopped

1 garlic clove, peeled and crushed (optional)

4-5 tbsp French dressing flavored wit Worcester sauce

Method :
  1. Tear lettuce into pieces and put into mixing bowl.
  2. Add onions, cheese, courgettes, 50 g almonds and garlic if used.
  3. Add dressing.
  4. Toss thoroughly.
  5. Sprinkle with remaining nuts and serve as suggested.

Note :

Uncooked and unpeeled courgettes, tossed with blue cheese and nuts, make an original salad to serve with meat and fish dishes.
