Celery Root, Orange, Grapefruit, and Spinach Salad Recipes
Ingredients :
3 tbsp lemon juice
1 celery root
1 large pink or red grapefruit
2 oranges
1/2 cup orange juice
2 tbsp thick tomato puree
1 tsp sugar
4 handfuls small spinach leaves, rinsed
Method :
Place about 1 tablespoon of the lemon
juice in a bowl of cold water. Trim and peel the celery root. Cut it
into strips about 1/4 inch wide and 1.5 inches long, dropping them into
the bowl of water to keep them from turning brown. Cook in boiling
salted water until barely tender, 5-7 minutes. Drain and refresh under
cold water, and drain again.
Remove the peel and all of the white pith
from the grapefruit and oranges. Over a bowl to trap the juices, cut
carefully between the membranes to remove the grapefruit and orange
segments. Set aside. Combine the fruit juices, including what is in the
bowl, with the tomato and toss with the dressing. Place on 4 salad
plates and top with the orange and grapefruit segments.
Serves 4
A refreshing winter salad. The citrus
plays nicely off the starchy celery root and earthy leaves.
