1/2 tsp each: dried basil, dried oregano,
and garlic powder
1 tomato, diced
2 tsp soy sauce
3 whole wheat pitas
3 tbsp grated Parmesan Cheese
Heat the oil
in a large nonstick skillet, then add the sliced zucchini. Sprinkle with
the basil, oregano and garlic powder. Sauté until the zucchini begins to
soften, about 4 minutes. Add the diced tomato and soy sauce and stir to
mix. Remove from the heat.
pitas in toaster oven or a steamer, then cut them in half and stuff with
a generous serving of the zucchini mixture. Sprinkle with Parmesan
cheese and serve immediately.
