Wheat and Barley Cake Recipes

Ingredients :

90g barley flour

280g whole meal flour

1 tsp (scant) cream or tartar

1/3 tsp slat

250g honey

250g butter

4 eggs

60g candied peel

500g mixed fruit

1/3 tsp baking soda

1/2 cup milk

Method :
  1. Sift flours with cream of tartar and salt.
  2. Do not discard the bran remaining in the sifter.
  3. Sieving aerates the flour and is not meant to separate the meal from the bran.
  4. Set aside in a mixing bowl.
  5. Cream the honey and butter and add the eggs singly.
  6. Stir in the flours and then the fruit.
  7. When all is barely incorporated add the baking soda stirred into the milk.
  8. Give a final sweeping stir to make sure all flours are well incorporated, then place in an 18 cm (8") baking tin.
  9. Bake for 35 minutes in oven, then decrease the heat to 300F for the remainder of the baking time.

Oven - 350F for 35 minutes reducing to 300F for 55 minutes

Serves 4 - 6
