Sprouted Bread with Sun Dried Tomato Spread Recipes
Ingredients :
2 tbsp sun-dried tomato spread
1/4 red bell pepper, seeded and sliced
1/4 green bell pepper, seeded and sliced
few slices of red onion
2 tbsp vegetables tock or vegetable spray
2 slices sprouted or whole wheat bread
1/4 cup radish sprouts
Method :
Place the spread in a mini food processor
or blender and puree slightly to achieve a thinner spread. Saute the
peppers and onions in vegetable stock for 5 minutes or until soft. Cool. Toast the
bread and spread it with the sun-dried tomato mixture, then layer 1
slice with the sautéed peppers and onions and radish sprouts. Cover with
the remaining slice of toast. Serve the
sandwich with corn, orange and tomato relish, a tossed green salad, and
a legume-based soup.
Makes 1 sandwich
